Gluten Free Breakfast Burritos

Here is a simple recipe for “Gluten-Free Breakfast Burritos”.

I made this up for breakfast this morning and I thought I would share it with you.

I sliced up 5 or 6 slices of Canadian bacon.
And chopped up about a cup of broccoli.
and then set the aside.

I added 6 eggs in a frying pan.
Then added the Canadian bacon and the broccoli.
And added a slice of chopped cheese (you can substitute the cheese for a cheese alternative, like almond cheese or a vegan cheese).
Added some salt and pepper for taste.

Then scramble the eggs and the rest of the ingredients together.
Cook until the eggs are done.

I came across this great gluten-free bread recipe.

I tried Delicious Gluten-Free Bread at Gluten-Free Goddess. And it is Delicious. I like to share with others when I come across a great recipe, and this is a great one.

Beef Vegetable Soup

Gluten-Free Beef Vegetable Soup

Brown 1 1/2 – 2 pounds of Hamburger meat in a frying Pan.

In a Big Pot I add the rest of ingredients.
1 Box of Beef Stock or Broth (I like to use Imagine Organic Beef Broth, it has no sugar in it).
4-6 cups of Water
6 Peeled and Chopped Potatoes
1-2 pounds of chopped Carrots
1 Bunch of chopped Celery
(Optional) Add 1 1/2 cups of Brown Rice to the soup.

1 – 2 Tablespoons of Olive Oil
Salt and Pepper to Taste
Garlic Powder and Onion Powder to Taste
Oregano and Thyme to Taste
Cook till the vegetables are tender.
Then add the Hamburger.

I like to divide the soup and add more water then put half of it in the freezer for later.

Blueberry Muffins

Gluten-Free, Sugar-Free Blueberry Muffins

Mix dry ingredients in a mixing bowl.
1/2 cup Brown Rice Flour
1/2 cup Sorghum Flour
1/4 cup Potato Starch
1/4 cup Tapioca Starch
1 tsp. Xanthan Gum
1 tsp. Baking Powder
1 tsp. Cinnamon
1/4 tsp. Salt

In a smaller bowl mix together the liquid ingredients.
2 whipped Eggs
1/4 cup Honey
1/4 cup oil
1 tsp. Vanilla
e/2 cup milk (I used Rice Milk)
1 cup of Blueberries

Add the liquid ingredients to the dry ingredients and gently mix together.

Spoon into a muffin pan with muffin cups.

Bake at 350 degrees for 20-25 minutes.

Optional sprinkle with sugar when done baking.

Baked Chicken with Vegetables

Here is one of my families favorite dinners. Baked Chicken with Vegetables.

1 whipped Egg in a cereal bowl.
1 cup of Brown Rice Flour on a plate.
Salt, Pepper and Garlic Powder to Taste mixed in with the brown rice flour.
4 – 6 pieces of Chicken Breast.

Dip the Chicken in the egg and then in the flour mixture.

Place the chicken in aʼn x 13 cake pan that has 2 tbsp. Olive Oil and Butter.
(The Flour soaks up the olive oil and butter)

Gluten-Free Hawaiian Pizza

Here is an easy Gluten-Free Hawaiian Pizza to put together. And the crust has no sugar in it.

I bought bag of “Namaste Foods Gluten-Free Pizza Crust Mix“. It makes two 14″ crusts.

The instructions are to mix 1 1/2 cups of the Pizza Crust Mix with
1 tsp oil and 1 1/4 cups water.
Then beat with electric mixer for 3 minutes and the consistency will be that of cake batter.

Scrape the batter onto a greased pizza pan and spread it to at least 14 inches.
Then Bake at 450 degrees for 20 minutes.
When I took it out of the oven it had risen about a 1/2 inch.

Take it out of the oven.
Spread half of a small jar of Organic Pasta Sauce. (6 oz worth).
5 oz. of Canadian Style Bacon.
1 can of sliced black olives. (6 oz.)
1/2 can of Pineapple Chunks. (10 oz. worth)
1/2 oz of both Shredded Cheddar Cheese and Mozzarella Cheese. (a little more or less)
For those of you that can’t have dairy products, you can use cheese alternatives.
Example, Almond Cheese for one.

Then put the Pizza back in the oven for 15 minutes at ᒂ degrees.

Take out of the oven, slice it up and enjoy.

I tell you it was very yummy. I wasn’t sure what to expect from this Pizza Crust Mix, but it turned out really, really good.

Gluten Free Tuna Casserole

This is a variation on my tuna casserole I used to make way back when.

1 package (16oz.) Brown Rice Pasta Spirals  Boil about 6 cups of water and pour in the pasta and cook till tender. Then drain the water and rinse off.

3 packets Road’s End Organics Alfredo Sauce Mix  In a separate pan boil 1 1/2 cups of water and pour in the packets of Alfredo Sauce Mix, mix until smooth and thick. (Instead of alfredo sauce you could add red sauce or you can make your own sauce with Rice Milk and Brown Rice Flour and spices).

How to Eat Healthy and Gluten Free

This is the plan I like to go by and I think it is a good one.

Try to eat organic foods when possible, they have more nutrients in them.

  • Eat Alkaline Foods. Foods that don’t produce acid.
  • Eat Enough Fiber. 30 grams a day.
  • Watch your Glycemic/Blood Sugar Control. Don’t eat too much carbs and sweets.
  • Eat Meals of 40% Carbohydrates, 30% Protein and 30% Healthy Fats.
  • Stay away from Gluten and Avoid Cross Contamination.
  • Take your Vitamins/Minerals, Calcium/Magnesium, Zinc, EFA, Garlic, Probiotics, Digestive Enzymes, Antioxidants and Amino Acids daily.

Lisa’s Gluten Free, Sugar Free Brownies

 
Gluten Free, Sugar-Free Brownie Recipe
This recipe is very yummy.
 
In a separate bowl mix together the liquid ingredients.
Add in:

1/2 Cup Melted Butter

3/4 cup Honey

2 whipped Eggs
2 tsp. Vanilla
1/3 cup Water

In a separate bowl mix together the dry ingredients.
1 1/2 cups gluten free baking flour mix.
(I like to mix together sorghum, millet and brown rice flour in a bag, that is 1 cups brown rice flour and
1/2 cup each of the millet and sorghum flour. That is what I used as my gluten free baking flour mix).
